Simple Low-Carb Swoodle Carbonara Dinner

Ingredients

  • 3 eggs
  • 1 egg yolk
  • 60g parmesan
  • 250g mushrooms
  • 10 lean smoked bacon medallions
  • 2 tsp ghee
  • 270g swoodles

Preparation

  1. Fry the mushrooms and bacon medallions in 2 tsp ghee.

  2. Stir the egg and parmesan mixture through the fried ingredients.

  3. Add the swoodles and mix well.

  4. For best results, microwave the swoodles instead of boiling for quicker preparation.
