Savory Breakfast Plate with Eggs in Zoodle Nests

Ingredients

  • 2 eggs
  • 1/2 spiralized zucchini
  • ghee
  • 1 slice sourdough bread
  • 1/2 avocado
  • red pepper flakes
  • strawberries

Preparation

  1. Sauté the spiralized zucchini (zoodles) in ghee for one minute.

  2. Form nests with the zoodles.

  3. Crack the eggs into the nests.

  4. Cook until the egg whites are done.

  5. Toast a slice of sourdough bread.

  6. Spread 1/2 avocado on the toast and sprinkle with red pepper flakes.

  7. Add strawberries on the side.
