Savory Omelet with Vegetables and Avocado Side

Ingredients

  • Zucchini
  • Mushrooms
  • Kale
  • 2 eggs
  • Ghee, butter, or oil
  • 1/2 avocado
  • Salsa
  • Toasted slice of paleo bread

Preparation

  1. Heat a skillet over low to medium heat.

  2. Add ghee, butter, or oil to the skillet.

  3. Add cut-up zucchini, mushrooms, and kale.

  4. Cook until the vegetables are soft.

  5. Remove the vegetables from the skillet.

  6. Whisk 2 eggs.

  7. Pour the whisked eggs into the pan with a little ghee or butter.

  8. Let the eggs sit until they are cooked throughout.

  9. Add the vegetables to one side of the omelet.

  10. Fold the omelet over the vegetables.

  11. Remove from heat and serve with 1/2 avocado and salsa.
