Carbonara Stuffed Baked Potato
Ingredients
- 2 baking potatoes
- 1/2 onion, chopped
- olive oil
- 100g bacon, chopped
- 1 egg
- 20g Parmesan
- parsley, for topping
Preparation
Preheat the oven to 200°C. Place the potatoes on a plate and microwave on high for about 10 minutes, then turn and microwave for another 15 minutes.
Meanwhile, add some olive oil to a frying pan, add the onions and bacon, and cook until golden brown.
Once the potatoes have cooled, cut a cross on top, scoop out most of the potato flesh and add it to a bowl. Also add the onion, bacon, egg, and most of the Parmesan to the bowl, and mix well.
Scoop the mixture back into the potato skins, drizzle with a little oil, and bake for 10-15 minutes.
Serve, topped with the remaining Parmesan and parsley.
