One-Pan Stuffed Chicken Meatballs
Ingredients
- 2 tbsp olive oil
- 1-2 onions
- 1/4 cup beef bone broth
- 1 lb ground chicken
- 1 egg
- 1 cup breadcrumbs (I used gluten free breadcrumbs)
- 1 block of mozzarella cheese cut into cubes
Preparation
Add onions and oil to an oven-safe pan and cook on medium heat for 15 minutes until onions have browned.
Add 1/4 cup beef broth to the onions and continue cooking until all broth is absorbed.
Mix ground chicken, egg, breadcrumbs, and onions together in a bowl.
Form the mixture into balls, using a 1/4 cup measure to make them uniform in size.
Stuff each ball with a mozzarella cube.
Place the meatballs back in the oven-safe pan and bake until cooked through, approximately 30 minutes at 350 degrees.
Top with extra onions and mozzarella.
Serve and enjoy.
Notes
This recipe uses minimal ingredients and requires only one pan and one bowl for easy cleanup.
