Spinach and Feta Chicken Burgers with Sweet Potato Fries
Ingredients
Chicken burgers
- 1 lb ground chicken
- 1 egg
- 1/4 cup chopped spinach
- 1/4 cup feta cheese
- 1/4 cup diced red onion
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp chili powder
- Sprinkle of salt and pepper
Sweet potato fries
- 2 sweet potatoes
- 2 tablespoons olive oil
- Salt and pepper
Preparation
Chicken burgers
Whisk the egg then add everything else in.
Form 7-8 small burgers.
Heat a skillet over medium heat.
Add some olive oil.
Add the burgers and cook for about 5 minutes on each side.
Cook until the internal temperature reaches 165°F; you can finish in the oven if needed.
Sweet potato fries
Cut sweet potatoes into fries.
Coat with 2 tablespoons olive oil, salt, and pepper.
Bake at 425°F for about 35 minutes.
