Spinach and Feta Chicken Burgers with Sweet Potato Fries

Ingredients

Chicken burgers

  • 1 lb ground chicken
  • 1 egg
  • 1/4 cup chopped spinach
  • 1/4 cup feta cheese
  • 1/4 cup diced red onion
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • Sprinkle of salt and pepper

Sweet potato fries

  • 2 sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper

Preparation

Chicken burgers

  1. Whisk the egg then add everything else in.

  2. Form 7-8 small burgers.

  3. Heat a skillet over medium heat.

  4. Add some olive oil.

  5. Add the burgers and cook for about 5 minutes on each side.

  6. Cook until the internal temperature reaches 165°F; you can finish in the oven if needed.

Sweet potato fries

  1. Cut sweet potatoes into fries.

  2. Coat with 2 tablespoons olive oil, salt, and pepper.

  3. Bake at 425°F for about 35 minutes.
