Oven-Baked Saucy Meatball Potatoes
Ingredients
Potatoes
- 5 potatoes
- Salt to taste
- Paprika to taste
Meatballs
- 500 grams ground meat
- 3 tablespoons breadcrumbs
- 1 egg
- 1 onion
- 1 teaspoon salt
- 1 teaspoon black pepper
Sauce
- 2 cloves garlic
- 1 tablespoon tomato paste
- 1/2 cup olive oil
- 1 cup water
- 1 teaspoon salt
- 1 teaspoon red pepper flakes
Preparation
Slice the potatoes thinly into rounds and rub them with salt and paprika to taste. Arrange them side by side in a baking tray.
In a bowl, combine ground meat, breadcrumbs, egg, finely chopped onion, salt, and black pepper. Mix well and form into small balls. Place the meatballs in the center of the tray with the potatoes.
For the sauce, mix minced garlic, tomato paste, olive oil, water, salt, and red pepper flakes. Pour the sauce over the potatoes and meatballs.
Bake in the oven until the potatoes are tender and the meatballs are cooked through.
