Oven-Baked Chicken with Cheese and Tomato Sauce

Ingredients

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon oregano
  • 2 tablespoons basil
  • 2 teaspoons paprika
  • 1 teaspoon crushed chili
  • 2 teaspoons garlic powder
  • 2 teaspoons ginger powder
  • 1/3 cup breadcrumbs
  • 1/3 cup finely grated parmesan cheese
  • 4 large chicken fillet pieces
  • 2 tablespoons olive oil
  • 1 large chopped onion
  • 4 cloves crushed garlic
  • 1 large chopped green bell pepper
  • 2 large peeled and chopped tomatoes
  • 2 tablespoons tomato paste
  • 1/2 cup water
  • 1 cup shredded mozzarella cheese

Preparation

  1. In a small bowl, place the salt, pepper, oregano, basil, paprika, chili, garlic, and ginger. Mix the spices to combine.

  2. In a wide bowl, place the breadcrumbs, parmesan cheese, and one-third of the spice mixture. Mix the ingredients to combine.

  3. Prepare two pieces of parchment paper. Spray a little oil on one piece. Place two chicken fillets on it. Spray oil on the second piece and place on top of the fillets. Use a meat mallet to pound the chicken several times to make it thin. Repeat with the remaining pieces. Sprinkle half of the remaining spices on the chicken pieces.

  4. Coat the chicken pieces in the breadcrumb mixture to cover completely.

  5. In a medium-sized pot, place the oil. Heat on medium heat. Add the onion. Stir the onion until it softens. Add the garlic, bell pepper, tomatoes, tomato paste, and water. Add the remaining spices. Stir the tomato mixture for several minutes. Place the mixture in a medium-sized baking dish.

  6. Arrange the breadcrumb-coated chicken pieces on the tomato mixture. Sprinkle the remaining breadcrumb mixture. Spread the mozzarella cheese over the chicken. Cover the dish with aluminum foil.

  7. Position the oven rack in the middle. Preheat the oven to 180°C.

  8. Place the chicken fillet dish with cheese in the oven for 30 minutes until the chicken is cooked and the tomato is bubbly.
