Chicken Fillet with Balsamic Sauce
Ingredients
- 500 grams chicken fillet
- 1/2 teaspoon oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon cardamom
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon ginger powder
- 1/2 teaspoon crushed chili
- 1/2 teaspoon coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 cloves garlic, crushed
- 1 teaspoon ginger, chopped
- 1/4 cup balsamic vinegar
- 2 tablespoons brown sugar
- 2 medium tomatoes, chopped and seeded
- 2 tablespoons tomato paste
- 1/2 cup liquid cream
- 1 cup mozzarella cheese
- 2 tablespoons chopped parsley
Preparation
In a bowl, place the oregano, paprika, cardamom, cumin, turmeric, ginger powder, crushed chili, coriander, salt and pepper, and mix well to combine the ingredients.
Spread some of the spice mixture on the chicken and rub it in well.
In a skillet, heat the olive oil and butter.
Add the chicken and cook for a few minutes until the bottom is golden brown.
Flip the chicken to the other side and cook until the bottom is golden brown.
Remove the chicken and set it aside.
In the same skillet, add the garlic and chopped ginger, and stir for a little while.
Add the balsamic vinegar, brown sugar, and the remaining spice mixture, and stir for a little while.
Add the chopped tomatoes, tomato paste, and liquid cream, and stir to mix.
Return the chicken to the skillet and place the mozzarella cheese on top.
Cover the skillet and let it cook for a few minutes until the chicken is done and the cheese melts.
Sprinkle the chopped parsley over the chicken, let it sit for a moment, then serve immediately.
