Vegan Spinach Soy Mince Cannelloni Dish

Ingredients

  • Cannelloni pasta
  • Vegan soymince, around 300-400g
  • 2 garlic cloves
  • A few drops of liquid smoke
  • 2 tbsp soya (dark)
  • 1 tbsp vegetable fond
  • 2 tbsp tomato paste
  • Vegan cheese, grated (1/2 block used)
  • 400ml tomato sauce
  • Salt and pepper
  • Even more garlic
  • Spinach (amount not specified)
  • Oil for frying (amount not specified)
  • Sugar (1/2 tbsp for sauce)

Preparation

  1. Fry spinach in oil and garlic.

  2. Add vegan soya mince and fry for 5-10 minutes.

  3. Add a few drops of liquid smoke, 2 tbsp soya, 2 tbsp tomato paste, 1 tbsp vegetable fond, garlic, salt, and vegan cheese.

  4. Allow to fry for another 5-10 minutes while making the tomato sauce.

  5. For the tomato sauce: Heat 400ml tomato sauce, add 4 garlic cloves, 1/2 tbsp sugar, salt, and pepper, and simmer for 5-10 minutes.

  6. Preheat oven to 190 C and grease a baking form.

  7. Fill the canelloni with the filling and place in the form, repeating as necessary.

  8. Pour over the tomato sauce and add grated cheese on top.

  9. Bake in the oven for approximately 30 minutes.

  10. Eat warm with a salad.
