Chocolate Banana Frozen Raw Vegan Cheesecake Bars

Ingredients

Crust

  • 3 bars of squareorganics crisp bars

Cheesecake

  • 1 cup raw cashews (soaked)
  • 6 tablespoons pure maple syrup
  • 3 tablespoons coconut oil
  • 2-3 tablespoons foragerproject cashew yogurt
  • 1/2 frozen banana
  • 1 teaspoon vanilla extract
  • 3 tablespoons navitasorganics cacao powder

Preparation

  1. Soak raw cashews in boiling water for 45 minutes.

  2. Cut the crisp bars in half lengthwise for the crust.

  3. Blend the cheesecake ingredients (cashews, maple syrup, coconut oil, cashew yogurt, frozen banana, vanilla extract) in a food processor.

  4. Place half of the blended mixture on the crust.

  5. Blend 3 tablespoons of cacao powder into the remaining mixture to make the chocolate layer.

  6. Freeze for 2 hours before serving.

  7. Store in a covered container in the freezer.
