Gluten-Free Sweet Potato Biscuits

Ingredients

  • 1 cup mashed sweet potato
  • 3 eggs
  • 1 tsp baking soda
  • 2 1/2 cups almond flour
  • 1/2 cup tapioca flour
  • 1/4 cup ghee or butter

Preparation

  1. Preheat oven to 400°F

  2. Mix all ingredients together in a bowl

  3. Scoop batter using a 1/4 cup measure onto a baking sheet lined with parchment paper

  4. Bake for 25-30 minutes depending on desired doneness
