Gluten-Free Sweet Potato Biscuits
Ingredients
- 1 cup mashed sweet potato
- 3 eggs
- 1 tsp baking soda
- 2 1/2 cups almond flour
- 1/2 cup tapioca flour
- 1/4 cup ghee or butter
Preparation
Preheat oven to 400°F
Mix all ingredients together in a bowl
Scoop batter using a 1/4 cup measure onto a baking sheet lined with parchment paper
Bake for 25-30 minutes depending on desired doneness
