Fluffy Banana Bread with Yogurt and Almond Flour
Ingredients
- 2 small ripe bananas
- 1/2 cup yogurt
- 2 eggs
- 1/2 cup coconut sugar
- 1/2 cup cassava flour or all-purpose flour
- 1 cup almond flour or cashew flour
- 1 tsp. baking soda
Preparation
Preheat oven to 350F and spray or line a loaf pan.
In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.
Pour batter into loaf pan and bake for 30-35 minutes. Let it cool for at least 15-20 minutes before cutting slices.
