Fluffy Banana Bread with Yogurt and Almond Flour

Ingredients

  • 2 small ripe bananas
  • 1/2 cup yogurt
  • 2 eggs
  • 1/2 cup coconut sugar
  • 1/2 cup cassava flour or all-purpose flour
  • 1 cup almond flour or cashew flour
  • 1 tsp. baking soda

Preparation

  1. Preheat oven to 350F and spray or line a loaf pan.

  2. In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.

  3. Pour batter into loaf pan and bake for 30-35 minutes. Let it cool for at least 15-20 minutes before cutting slices.
