Banana and Walnut Bread
Ingredients
- 4 ripe bananas, mashed
- 125ml runny honey
- 2 eggs, beaten
- 1 tsp vanilla
- 1/2 cup vegetable oil
- 2 cups flour (1 cup self raising + 1 cup whole wheat)
- 1 tsp baking soda
- 3/4 cup chopped walnuts
Preparation
Preheat oven to 200c/fan 180c and line a loaf tin with greaseproof paper
In a large bowl, add the mashed bananas, honey, egg, vanilla, oil, then stir
Sift in the flour, baking soda and walnut and stir well to combine
Pour into the loaf tin and bake for 50-55 minutes or until a knife inserted in middle comes out clean
Tip: cover with foil half way through baking if it's beginning to brown on top)
