Fresh Strawberry Bread with Vanilla and Icing

Ingredients

  • 2 cups chopped fresh strawberries
  • 1/4 cup sugar
  • 1/2 cup milk
  • 1/3 cup olive oil
  • 2 tsp vanilla
  • 2 large eggs
  • 2 cups plain flour
  • 2 tbsp flour (extra)
  • 2 tsp baking powder

Icing

  • 1 cup strawberries
  • 2 cups icing sugar

Preparation

  1. Preheat oven to 180C and line a loaf tin

  2. In a large bowl, mix together the sugar, milk, oil, eggs and vanilla

  3. Put a fine sieve over the bowl and sieve in the 2 cups flour and baking powder. Mix the wet and dry ingredients until just combined and do not over mix

  4. In a smaller bowl, mix the diced strawberries and 2 tbsp flour. Be gentle with the strawberries but make sure they’re well coated with flour

  5. Add the strawberries and using a spatula, gently fold through the mix

  6. Pour into your loaf tin and bake for 25 minutes

  7. Lightly cover with foil to prevent the top from burning and bake for about a further 25 minutes. It’s ready when an inserted knife comes out clean

  8. If you want to add the icing, allow the loaf to cool completely before icing

  9. To make the icing, chop the 1 cup of strawberries and put in a small pan. Cook for about 10 minutes until cooked down. Strain through a fine sieve to get just the juice

  10. Put the icing sugar in a small bowl and gradually add the strawberry juice until you have a nice thick icing. You may not need all the juice

  11. Drizzle over your strawberry bread and enjoy
