Birthday Cake Banana Bread

Ingredients

  • 2 small ripe bananas (1/2 cup mashed)
  • 1/2 cup yogurt (or 1/4 cup milk)
  • 2 eggs
  • 1/2 cup coconut sugar
  • 1/2 cup cassava flour (or all purpose flour)
  • 1 cup almond flour (or pecan/cashew/walnut flour)
  • 1 tsp. baking soda
  • frosting
  • sprinkles

Preparation

  1. Preheat oven to 350F and spray or line a loaf pan.

  2. In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.

  3. Pour batter into an 8x8 pan and bake for 25 minutes, or use a loaf pan and bake for 30 minutes.

  4. After it has cooled, cut into little bites.

  5. Coat with icing mixed with pomegranate powder and add sprinkles.
