Gluten-Free Vanilla and Chocolate Birthday Cake

Ingredients

Vanilla layer

  • 3 eggs
  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 1/2 tbsp softened ghee or softened butter

Chocolate layer

  • 3 eggs
  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup coconut sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 1/2 tbsp softened ghee or softened butter

Toppings

  • @simplemills vanilla frosting (I used 1 1/2 containers)

Preparation

  1. In a bowl, whisk the eggs for the vanilla layer

  2. Add almond flour, coconut flour, coconut sugar, baking powder, vanilla, and butter to the eggs and mix everything together well with a mixer

  3. Grease a 6-inch cake pan and add the batter

  4. Bake in the oven for 35-38 minutes at 350°F

  5. Repeat the same exact process for the chocolate layer, including adding the unsweetened cocoa powder

  6. Let both layers cool completely

  7. Take a knife and loosen them around the edges

  8. Remove the cakes and add frosting on top of one layer

  9. Stack the other layer on top of the iced one to create the middle layer of icing

  10. Add frosting all around the stacked cake with a knife or pastry knife

  11. Add sprinkles and candles
