Vanilla and Lemon Birthday Cake
Ingredients
Lemon layer
- 3 eggs
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup maple syrup
- 1 tsp baking powder
- 1 tbsp lemon zest
- juice of 1/2 lemon
- 1 1/2 tbsp melted ghee or softened butter
Vanilla layer
- 3 eggs
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1 tsp vanilla
- 1 1/2 tbsp melted ghee or softened butter
Preparation
Preheat oven
Preheat oven to 350°F
Lemon layer
In a bowl, whisk the eggs.
Add in the flour, lemon zest, maple syrup, baking powder, lemon juice, and butter.
Mix everything together well with a mixer.
Grease a 6 inch cake pan and add the batter.
Bake in the oven for 35-38 minutes.
Vanilla layer
In a bowl, whisk the eggs.
Add in the flour, vanilla, coconut sugar, baking powder, and butter.
Mix everything together well with a mixer.
Grease a 6 inch cake pan and add the batter.
Bake in the oven for 35-38 minutes.
Assembly
Let both layers cool completely.
Take a knife and loosen them around the edges. Remove the cakes.
Add frosting on top of one.
Stack the other on top of the iced one. This creates the middle layer of icing so make it as thick as you want.
Add frosting all around with either a knife or a pastry knife.
Add sprinkles and candles!
