Quick 12-Minute Sugar Cookies

Ingredients

  • 1 tbsp liquid or melted coconut oil (or vegan butter like @miyokoscreamery)
  • 2 tbsp unsweetened nut or seed mylk
  • 1/2 tbsp chia seeds
  • 1/4 cup coconut sugar
  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder

Preparation

  1. Preheat oven to 350 degrees

  2. Mix the oil, chia, mylk and coconut sugar in a large bowl until fully combined

  3. Stir in flours and baking powder and mix until cookie dough forms

  4. Roll dough into about six balls and place on a non stick cookie sheet

  5. Press down with three fingers or a fork to flatten

  6. Bake at 350 degrees for 10-12 minutes

  7. After baking, spread softened coconut butter and add berries or sprinkles
