Quick 12-Minute Sugar Cookies
Ingredients
- 1 tbsp liquid or melted coconut oil (or vegan butter like @miyokoscreamery)
- 2 tbsp unsweetened nut or seed mylk
- 1/2 tbsp chia seeds
- 1/4 cup coconut sugar
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 1/2 tsp baking powder
Preparation
Preheat oven to 350 degrees
Mix the oil, chia, mylk and coconut sugar in a large bowl until fully combined
Stir in flours and baking powder and mix until cookie dough forms
Roll dough into about six balls and place on a non stick cookie sheet
Press down with three fingers or a fork to flatten
Bake at 350 degrees for 10-12 minutes
After baking, spread softened coconut butter and add berries or sprinkles
