Drakes Coffee Cakes

Ingredients

  • 1/3 cup melted coconut oil
  • 1/2 cup coconut sugar
  • 1 flax egg (1 tb ground flax /3 tb water)
  • 1 cup unsweetened applesauce
  • 2 cups almond flour
  • 1/2 cup tapioca flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon

Preparation

  1. Preheat oven to 350

  2. Combine melted coconut oil with sugar, flax eggs and apple sauce then combine all the dry ingredients

  3. Spoon in mixture into greased cupcake pan (makes 12)

  4. For crumb toppings: 1/2 cup (heaping) almond flour, 2 tablespoons liquid coconut oil, 1 teaspoon cinnamon, 2 tablespoons coconut sugar

  5. Make topping mixture. Spoon topping on to each muffin, press down slightly

  6. Bake for 20-25 minutes until toothpick method comes out clean
