Tomato Eggplant Burger
Ingredients
- 2 burger buns
- a couple of salad leaves
- 50g soy yoghurt
- splash tabasco
- salt, pepper
- 1/2 tomato
- 1/2 eggplant
- 1/2 avocado
- 1 1/2tb plant-based mayonnaise
- 1/2 garlic clove
- olive oil
- 2 pickled cucumbers
- 1 king oyster mushroom
- 2tb soy sauce
Preparation
Slice the eggplant and fry in hot oil until golden
Slice up the king oyster mushroom and fry in oil
Deglaze in soy sauce
Slice up the avocado and tomato and sprinkle salt on top
Cut the pickled cucumbers into small slices
Heat up the buns and cut in has
Press the garlic and fry in a pan, then let it cool down
Mix with the yoghurt, mayonnaise, tabasco, salt and pepper and puree all together in a mixer
Spread on top of the buns
Add the rest ingredients on top
