Vegan Millionaire's Shortbread Bars

Ingredients

  • 100g whole oats
  • 100g ground almonds
  • 1 tbsp maple syrup
  • 1 tbsp melted coconut oil
  • splash of dairy-free milk
  • 1/2 cup peanut butter
  • 1/2 cup maple syrup
  • pinch of salt
  • 1 bar vegan chocolate

Preparation

  1. Blend the oats to a fine flour in a blender or food processor.

  2. Combine in a bowl with the almonds, maple syrup, coconut oil, and dairy-free milk if needed, add a pinch of salt and press into a small brownie pan.

  3. Place in the oven at 180°C for 15 minutes.

  4. In another bowl, combine the peanut butter and maple syrup with a pinch of salt until thick and creamy.

  5. Once the base is almost cool, pour over the caramel and place in the freezer.

  6. Melt the chocolate and spread evenly on top.

  7. Let it set in the fridge or freezer, then slice and enjoy.
