Spiralized Vegan Potato Pancakes

Ingredients

  • 2 pounds russet potatoes, peeled
  • 1 medium onion, peeled
  • 1/2 cup matzah meal (or substitute cornmeal)
  • 2 vegan egg replacers (equivalent to 6 tablespoons)
  • juice of one lemon
  • 1/2 teaspoon fresh pepper
  • kosher salt
  • canola oil (or substitute peanut oil)

Preparation

  1. Spiralize potatoes and onion, then pat dry with a kitchen towel to absorb moisture. Place in a bowl and mix with vegan eggs, matzah meal, lemon juice, salt, and pepper. Mix well.

  2. Heat 1/2 inch of oil in a 12-inch heavy-bottomed pan over medium to medium-high heat until hot when tested 6 inches above the pan.

  3. Scoop 1/4 to 1/3 cup of mixture, form into a ball, flatten, and place in the skillet with a spatula. Press down and cook in batches, fitting about 3-4 latkes per batch.

  4. Fry until edges brown, about 3-5 minutes, then flip and fry for another 3-5 minutes. Repeat with remaining mixture and drain on paper towels lined baking sheet.

Serving suggestions

  1. Serve with sour cream and/or applesauce.

Tips

  1. Set aside some latkes for yourself as they go quickly after all the effort.
