Vegan Potato Latkes for Hanukkah
Ingredients
- 3 medium Russet potatoes, peeled
- 3 gold potatoes, peeled
- 6 tablespoons Just Egg
- 6 tablespoons all-purpose flour
- 1/2 medium onion
- 1 tablespoon chives
- 1 1/4 teaspoons salt
- pepper to taste
- grape seed oil for frying
- 2 tablespoons vegan butter (optional)
Preparation
Using a hand grater or food processor with a grating blade, grate the peeled potatoes and onion
Add the Just Egg, flour, salt, pepper, and chives and mix well
In a large frying pan, heat about 1.5 inches of grape seed oil
Scoop a golf ball-sized portion of the potato mixture and pat it down to about 3-4 inches wide, then place it in the heated oil and cook each side for 3 minutes until golden brown
Place the cooked latkes on paper towels to drain any excess oil
Serve warm with vegan sour cream and apple sauce
Tips
A little thinner latke will cook more evenly
Keep them warm on a baking sheet in a 275-300 degree oven until ready to serve
