Vegan Potato Latkes for Hanukkah

Ingredients

  • 3 medium Russet potatoes, peeled
  • 3 gold potatoes, peeled
  • 6 tablespoons Just Egg
  • 6 tablespoons all-purpose flour
  • 1/2 medium onion
  • 1 tablespoon chives
  • 1 1/4 teaspoons salt
  • pepper to taste
  • grape seed oil for frying
  • 2 tablespoons vegan butter (optional)

Preparation

  1. Using a hand grater or food processor with a grating blade, grate the peeled potatoes and onion

  2. Add the Just Egg, flour, salt, pepper, and chives and mix well

  3. In a large frying pan, heat about 1.5 inches of grape seed oil

  4. Scoop a golf ball-sized portion of the potato mixture and pat it down to about 3-4 inches wide, then place it in the heated oil and cook each side for 3 minutes until golden brown

  5. Place the cooked latkes on paper towels to drain any excess oil

  6. Serve warm with vegan sour cream and apple sauce

Tips

  1. A little thinner latke will cook more evenly

  2. Keep them warm on a baking sheet in a 275-300 degree oven until ready to serve
