Balsamic Roasted Potatoes with Vegan Chicken and Vegetables

Ingredients

  • Generous handful of baby potatoes
  • Asparagus
  • Tenderstem broccoli
  • 1 pack of Like Chicken Bites
  • Small red onion
  • 2 cloves of garlic
  • Balsamic vinegar
  • Olive oil

Preparation

  1. Preheat oven to 200°C.

  2. Slice the potatoes in half, chop the onion and garlic. Place on an oven tray. Drizzle with a little oil, vinegar and pinch of salt.

  3. Coat the ingredients in the oil mix and roast for 20-25 minutes.

  4. After 25 minutes remove from the oven and add the rest of the ingredients. Drizzle with a little more oil and vinegar and roast for a further 15-20 minutes until everything is golden.

  5. Top with chopped baby tomatoes, fresh basil and black pepper.

  6. Serve with a warm wholemeal seeded sourdough roll.
