Balsamic Roasted Potatoes with Vegan Chicken and Vegetables
Ingredients
- Generous handful of baby potatoes
- Asparagus
- Tenderstem broccoli
- 1 pack of Like Chicken Bites
- Small red onion
- 2 cloves of garlic
- Balsamic vinegar
- Olive oil
Preparation
Preheat oven to 200°C.
Slice the potatoes in half, chop the onion and garlic. Place on an oven tray. Drizzle with a little oil, vinegar and pinch of salt.
Coat the ingredients in the oil mix and roast for 20-25 minutes.
After 25 minutes remove from the oven and add the rest of the ingredients. Drizzle with a little more oil and vinegar and roast for a further 15-20 minutes until everything is golden.
Top with chopped baby tomatoes, fresh basil and black pepper.
Serve with a warm wholemeal seeded sourdough roll.
