Classic Vegan Danube Wave Cake
Ingredients
Batter
- 2 jars dark sweet cherries, drained (total weight 720g)
- 550 g all-purpose flour (Type 405)
- 1 packet baking powder
- 300 g sugar
- 1 packet vanilla sugar
- 350 ml sparkling water
- 200 ml neutral vegetable oil
- 3 tablespoons unsweetened cocoa powder
- 80 ml oat milk (or soy milk)
Pudding cream
- 2 packets vegan vanilla pudding powder
- 650 ml oat milk
- 120 g sugar
- 200 g vegan margarine
Chocolate glaze
- 250 g vegan dark chocolate
- 2 tablespoons vegan margarine
Preparation
Grease a baking sheet (38 x 45 cm)
Preheat the oven to 180°C (convection: 160°C)
Drain the cherries
Mix flour with baking powder, sugar, and vanilla sugar in a bowl
Add sparkling water and vegetable oil and mix for 2 minutes with an electric mixer
Spread half of the batter on the baking sheet
Mix the remaining batter with cocoa powder and oat milk and spread over the light batter
Distribute the cherries on top and bake for 30 minutes
Meanwhile, mix the pudding powder with sugar and 4-5 tablespoons of oat milk
Bring the remaining oat milk to a boil and stir in the pudding mix
Boil the pudding briefly and pour into a bowl
Cover the pudding directly with plastic wrap and chill
Let the cake cool completely
Spread the chilled pudding over the cooled cake base
Melt the dark chocolate and vegan margarine together for the glaze
Pour the melted chocolate glaze over the pudding layer
Let the cake set until the glaze is firm
