Crunchy Vegan Valentine's Sandwich Cookies
Ingredients
- 250g vegan butter block
- 200g caster sugar
- 350g self-raising flour
- 1 tbsp cocoa powder
- 1 tsp vanilla extract
- Red food coloring (optional)
- 500g icing sugar (for buttercream)
- 150g vegan butter block (for buttercream)
- 2 tsp vanilla extract (for buttercream)
- 2-3 tbsp soya milk (for buttercream)
Preparation
Preheat the oven to 180°C.
Soften the vegan butter and mix it with the caster sugar.
If using food coloring, add it now to achieve a deep red color.
Add the vanilla extract, cocoa powder, and self-raising flour to the mixture, and mix until a smooth dough forms. You may need to use your hands instead of a spoon.
Shape the dough into balls, place them on a lined baking sheet, and slightly flatten them with your hands.
Bake the cookies for 10 minutes, then allow them to cool before transferring.
In a food mixer, combine the icing sugar and vegan butter for the buttercream. As it starts to come together, add the vanilla extract and soya milk.
Increase the speed and beat the mixture until it becomes light and fluffy.
Once the cookies are completely cool, pipe the buttercream onto the undersides of the cookies and sandwich them together.
