Simple Creamy Coconut Curry

Ingredients

  • 1/2 onion
  • 1 carrot, chopped
  • ginger
  • about 1/4 butternut squash
  • about 1/3 cauliflower
  • handful of edamame
  • keralan paste
  • 1/4 to 1/2 can coconut milk
  • veg stock (enough to cover veggies)
  • juice of 1/4 lemon
  • salt and pepper
  • pinch of turmeric

Preparation

  1. Sauté the vegetables until cooked.

  2. Add the keralan paste, coconut milk, and vegetable stock; simmer for about 20 minutes or until the stock has evaporated and the curry is thick.

  3. Once all cooked through, stir in the lemon juice, salt, pepper, and turmeric.
