Simple Creamy Coconut Curry
Ingredients
- 1/2 onion
- 1 carrot, chopped
- ginger
- about 1/4 butternut squash
- about 1/3 cauliflower
- handful of edamame
- keralan paste
- 1/4 to 1/2 can coconut milk
- veg stock (enough to cover veggies)
- juice of 1/4 lemon
- salt and pepper
- pinch of turmeric
Preparation
Sauté the vegetables until cooked.
Add the keralan paste, coconut milk, and vegetable stock; simmer for about 20 minutes or until the stock has evaporated and the curry is thick.
Once all cooked through, stir in the lemon juice, salt, pepper, and turmeric.
