Vegan and Refined Sugar Free Doughnuts
Ingredients
- 1.5 cups spelt flour
- 3 tbsp cocoa powder
- 1.5 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 3/4 cup soya milk
- 1 tsp apple cider vinegar
- 2 tbsp ground chia seed
- 1 tbsp vanilla extract
- 1/3 cup grape seed oil
- 1/2 cup agave
- chocolate glaze:
- 1/2 cup oatmilk
- 3 tbsp cocoa powder
- 2 tbsp maple syrup
- 1 tsp vanilla bean paste
- 2 tbsp cacao butter drops
Preparation
Method: In a small bowl stir the vinegar and soy milk together and let sit for a few minutes
Mix the flour, baking powder, bicarbonate of soda and cocoa powder in a bowl
Add the remaining ingredients to the soy milk mixture and mix
Then add to the flour mix and stir well to combine
Spoon in to 12 greased doughnut moulds and bake at 175°C for 10 mins or until a cocktail stick inserted in the doughnut comes out clean
Remove carefully from moulds and cool on wire racks
Heat everything except cacao butter in a small pan, bring to the boil and simmer for a minute or two until slightly thickened. Remove from heat and stir in the cacao butter
Dip the doughnuts into the glaze while it is still warm and decorate with sprinkles of your choice. -
