Vegan and Refined Sugar Free Doughnuts

Ingredients

  • 1.5 cups spelt flour
  • 3 tbsp cocoa powder
  • 1.5 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 3/4 cup soya milk
  • 1 tsp apple cider vinegar
  • 2 tbsp ground chia seed
  • 1 tbsp vanilla extract
  • 1/3 cup grape seed oil
  • 1/2 cup agave
  • chocolate glaze:
  • 1/2 cup oatmilk
  • 3 tbsp cocoa powder
  • 2 tbsp maple syrup
  • 1 tsp vanilla bean paste
  • 2 tbsp cacao butter drops

Preparation

  1. Method: In a small bowl stir the vinegar and soy milk together and let sit for a few minutes

  2. Mix the flour, baking powder, bicarbonate of soda and cocoa powder in a bowl

  3. Add the remaining ingredients to the soy milk mixture and mix

  4. Then add to the flour mix and stir well to combine

  5. Spoon in to 12 greased doughnut moulds and bake at 175°C for 10 mins or until a cocktail stick inserted in the doughnut comes out clean

  6. Remove carefully from moulds and cool on wire racks

  7. Heat everything except cacao butter in a small pan, bring to the boil and simmer for a minute or two until slightly thickened. Remove from heat and stir in the cacao butter

  8. Dip the doughnuts into the glaze while it is still warm and decorate with sprinkles of your choice. -
