Easy Mediterranean Farro Salad

Ingredients

  • 1 cup dry farro
  • 1 1/2 cups diced cucumber
  • 1 1/2 cups halved cherry tomatoes
  • 1/3 cup diced red onion
  • 1/2 cup crumbled feta (vegan or regular)

Dressing

  • 1/3 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp chopped parsley
  • 1 1/2 tbsp finely chopped, oil packed sun-dried tomatoes
  • 1/2 tsp dijon mustard
  • 3/4 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Black pepper to taste

Preparation

  1. Cook farro according to package directions.

  2. Let it cool.

  3. Whisk together all dressing ingredients.

  4. Pour over all salad ingredients.

  5. Toss well to coat.

  6. Enjoy!

Tips

  1. For a gluten-free version, substitute farro with quinoa or brown rice.
