Easy Mediterranean Farro Salad
Ingredients
- 1 cup dry farro
- 1 1/2 cups diced cucumber
- 1 1/2 cups halved cherry tomatoes
- 1/3 cup diced red onion
- 1/2 cup crumbled feta (vegan or regular)
Dressing
- 1/3 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 2 tbsp chopped parsley
- 1 1/2 tbsp finely chopped, oil packed sun-dried tomatoes
- 1/2 tsp dijon mustard
- 3/4 tsp dried oregano
- 1/2 tsp kosher salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Black pepper to taste
Preparation
Cook farro according to package directions.
Let it cool.
Whisk together all dressing ingredients.
Pour over all salad ingredients.
Toss well to coat.

For a gluten-free version, substitute farro with quinoa or brown rice.
