Golden Tofu Cakes with Vegetables
Ingredients
- 14 oz firm tofu
- 1/4 cup chopped celery
- 1/4 cup chopped jicama
- 1 small carrot, chopped
- 2.5 tablespoons tapioca starch
- 2 teaspoons salt
- a pinch of white pepper
- oil for pan-frying
- Sweet chili sauce with chopped cilantro
Preparation
Squeeze out as much water as possible from the tofu and transfer it to a large bowl.
Add the chopped celery, jicama, carrot, tapioca starch, salt, and white pepper to the tofu and mix until well combined.
Form the mixture into patties using about 2 tablespoons per patty.
Heat a non-stick pan and drizzle a thin layer of oil to cover the pan.
Place the patties in the pan and pan-fry on low-medium heat until golden brown on both sides, flipping when the bottom is golden.
Place the cooked patties on parchment paper to absorb moisture.
Serve the tofu cakes wrapped in leafy greens and dipped in sweet chili sauce with a squeeze of lime juice.
Tips
Finely chop the vegetables for the best texture.
Chopped cilantro and sweet chili sauce make an excellent combination.
