Moist and Tender Orange Loaf Cake
Ingredients
- 320g plain flour
- 150g caster sugar
- 150ml fresh orange juice and zest (about 2 large oranges)
- 1.5tsp baking powder
- 1 flax egg (1 tbsp flax mixed with 3 tbsp water to form a gel)
- 150ml coconut milk
- 100ml coconut oil, melted
Frosting
- 1/2 cup vegan butter
- 2 cups icing sugar, sifted
- 2 tbsp orange zest
- 3 tbsp orange juice
Preparation
Preheat oven to 180•c and grease a loaf pan.
Add all dry ingredients to a mixing bowl and stir well.
Make a well in the middle and add all remaining ingredients.
Mix briefly to incorporate, taking care not to overmix.
Pour into prepared tin and bake for 50-55 mins, until a toothpick comes out clean.
Make frosting by mixing all frosting ingredients in a stand mixer or with an electric whisk until smooth and creamy.
Top with fresh orange zest and violas.
