Moist and Tender Orange Loaf Cake

Ingredients

  • 320g plain flour
  • 150g caster sugar
  • 150ml fresh orange juice and zest (about 2 large oranges)
  • 1.5tsp baking powder
  • 1 flax egg (1 tbsp flax mixed with 3 tbsp water to form a gel)
  • 150ml coconut milk
  • 100ml coconut oil, melted

Frosting

  • 1/2 cup vegan butter
  • 2 cups icing sugar, sifted
  • 2 tbsp orange zest
  • 3 tbsp orange juice

Preparation

  1. Preheat oven to 180•c and grease a loaf pan.

  2. Add all dry ingredients to a mixing bowl and stir well.

  3. Make a well in the middle and add all remaining ingredients.

  4. Mix briefly to incorporate, taking care not to overmix.

  5. Pour into prepared tin and bake for 50-55 mins, until a toothpick comes out clean.

  6. Make frosting by mixing all frosting ingredients in a stand mixer or with an electric whisk until smooth and creamy.

  7. Top with fresh orange zest and violas.
