Veggie Nori Wraps with Peanut Ginger Sauce
Ingredients
- Nori sheets
- Avocado
- Mango
- Red bell pepper
- Lettuce
- Cilantro
- Basil
- Cooked rice noodles
- Sesame seeds
Peanut ginger sauce
- 1/8 cup water
- 2 tablespoons PB2 Pure
- 1 teaspoon liquid aminos
- 1 teaspoon rice vinegar
- 1 tablespoon raw agave
- 1/2 teaspoon ginger (powdered)
- Squeeze of lime juice (optional)
- 1/2 teaspoon Thai chili flakes
- 1 teaspoon chopped peanuts
Preparation
Place nori sheet smooth side down on a clean dry surface.
Layer ingredients 2 inches from the edge closest to you, stacking on top of each other.
Roll tightly away from you, wrapping carefully until an inch of nori free edge is left exposed.
Use a basting brush to apply a generous amount of water to the free edge, and then complete the roll pressing down firmly and using your finger to seal.
Use a sharp knife to slice the roll.
Peanut sauce
Add all ingredients for peanut sauce to a dish and stir to combine.
Tips
Experiment with additional ingredients such as jalapeños, cucumber, tofu, mint, carrots, cabbage, kimchi, sauerkraut, cashews, edamame, pineapple, or sweet potato.
Consider adding fresh mint, cucumber, and seared tofu for a tasty variation.
