15-Minute One-Pot Lentil Dal
Ingredients
- 1 brown onion diced
- Packets of brown lentils and gungo split peas
- 1 tablespoon curry powder
- 1 tablespoon garam masala
- 1 teaspoon turmeric
- 1 teaspoon ground coriander
- 2 teaspoons garlic powder
- 1 tablespoon minced ginger
- 600ml vegetable stock (1 and a half stock cubes)
- 70g coconut cream
Serving suggestions
- Vegan naans
- Yoghurt, coriander and crispy onions to serve
Preparation
Cook the onion for about 5 minutes or until soft
Add all spices and minced ginger and cook for a few minutes
Add lentils and peas, vegetable stock and coconut cream
Simmer for 5-10 minutes then serve with yoghurt, coriander, crispy onions and naan
