15-Minute One-Pot Lentil Dal

Ingredients

  • 1 brown onion diced
  • Packets of brown lentils and gungo split peas
  • 1 tablespoon curry powder
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 2 teaspoons garlic powder
  • 1 tablespoon minced ginger
  • 600ml vegetable stock (1 and a half stock cubes)
  • 70g coconut cream

Serving suggestions

  • Vegan naans
  • Yoghurt, coriander and crispy onions to serve

Preparation

  1. Cook the onion for about 5 minutes or until soft

  2. Add all spices and minced ginger and cook for a few minutes

  3. Add lentils and peas, vegetable stock and coconut cream

  4. Simmer for 5-10 minutes then serve with yoghurt, coriander, crispy onions and naan
