Bolognese

Ingredients

  • 1 pack of aldi spicy tomato balls ?
  • 1 pack of pasta ?
  • 1 aubergine ?
  • 1 red pepper?
  • 1 onion?
  • 2 sticks of celery ?

Preparation

  1. Heat a tablespoon of oil in a pan, chop 1 onion and fry off for 5mins

  2. Chop pepper, aubergine & celery then add to onion with a 100ml of water and cook for 5mins

  3. Add 1 tablespoon of tomato purée, 1 tablespoon of tomato ketchup and 1/2 tin of chopped tomatoes

  4. Simmer for 10mins

  5. Meanwhile, cook pasta as per instructions and fry the meatballs for 15mins being carefully not to burn them

  6. Blitz vegetables with a hand held blender then add in meatballs
