Gluten Free Meatless Bolognese Dish
Ingredients
- 1 pack of Aldi Spicy Tomato Balls
- 1 pack of pasta
- 1 aubergine
- 1 red pepper
- 1 onion
- 2 sticks of celery
- 1 tablespoon of oil
- 1 tablespoon of tomato purée
- 1 tablespoon of tomato ketchup
- 1/2 tin of chopped tomatoes
- 100ml of water
Preparation
Heat a tablespoon of oil in a pan, chop 1 onion and fry off for 5 minutes
Chop pepper, aubergine and celery then add to onion with 100ml of water and cook for 5 minutes
Add 1 tablespoon of tomato purée, 1 tablespoon of tomato ketchup and 1/2 tin of chopped tomatoes
Simmer for 10 minutes
Meanwhile, cook pasta as per instructions and fry the meatballs for 15 minutes being careful not to burn them
Blitz vegetables with a handheld blender then add in meatballs
Plate up and enjoy
