Gluten Free Meatless Bolognese Dish

Ingredients

  • 1 pack of Aldi Spicy Tomato Balls
  • 1 pack of pasta
  • 1 aubergine
  • 1 red pepper
  • 1 onion
  • 2 sticks of celery
  • 1 tablespoon of oil
  • 1 tablespoon of tomato purée
  • 1 tablespoon of tomato ketchup
  • 1/2 tin of chopped tomatoes
  • 100ml of water

Preparation

  1. Heat a tablespoon of oil in a pan, chop 1 onion and fry off for 5 minutes

  2. Chop pepper, aubergine and celery then add to onion with 100ml of water and cook for 5 minutes

  3. Add 1 tablespoon of tomato purée, 1 tablespoon of tomato ketchup and 1/2 tin of chopped tomatoes

  4. Simmer for 10 minutes

  5. Meanwhile, cook pasta as per instructions and fry the meatballs for 15 minutes being careful not to burn them

  6. Blitz vegetables with a handheld blender then add in meatballs

  7. Plate up and enjoy
