Colorful Black Rice Salad with Turmeric Sauce
Ingredients
- Black rice
- Shredded beetroot
- Cauliflower
- Fresh herbs (dill, parsley, coriander...)
Turmeric sauce
- 2 cups cashews (soaked for at least 1 hour)
- 1 clove garlic or 1/2 tsp garlic powder
- Juice of 1 lemon (maybe more if you want more tang)
- 1 tbsp apple cider vinegar
- 1 1/2 tsp turmeric
- 1 tsp smoked paprika
- 1/2 tsp chilli flakes (optional)
- 2 tbsp nutritional yeast
- 1/2 tsp miso paste
- 1 tsp sea salt
- A few cracks of black pepper
Preparation
Roast cauliflower with smoked paprika, turmeric, garlic powder, and salt until tender.
Cook black rice according to package instructions.
Blend all sauce ingredients until smooth.
Assemble salad by combining black rice, shredded beetroot, roasted cauliflower, fresh herbs, and drizzle with turmeric sauce.
