Summer Vegetable Salad Bowl

Ingredients

  • Massaged kale
  • Mixed baby lettuces
  • Plum tomatoes
  • English cucumbers
  • Red cabbage
  • Green olives
  • Carrots
  • Pearl red onions
  • Radishes
  • Pumpkin seeds
  • Celery seeds
  • 1/2 cup chopped fresh Italian parsley
  • 2 tbsp sumac
  • 1 tsp salt
  • Juice from one fresh squeezed lemon
  • 1 tbsp olive oil
  • Couple cracks of fresh pepper
  • Avocado on the side

Preparation

  1. Chop all vegetables and other ingredients into bite-sized pieces.

  2. Massage the kale if it has not been pre-massaged to soften it.

  3. In a large bowl, combine all chopped ingredients with pumpkin seeds, celery seeds, sumac, salt, lemon juice, olive oil, and pepper.

  4. Toss everything together until well mixed.

  5. Serve with avocado on the side.
