Creamy Butter Chickpeas with Rice

Ingredients

  • 1 large onion
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 2 green chilis (optional)
  • 1 tsp garam masala
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne
  • 1/4 tsp ground mustard
  • 2-3 large ripe tomatoes (400g)
  • 1/2 cup water
  • 1 1/2 cups chickpeas
  • 3/4 cup coconut cream

Preparation

  1. Heat some oil in a large pot and add the onion, garlic, ginger, and chilis. Sauté for 5 minutes.

  2. Stir in all the spices until fragrant.

  3. Add the tomatoes, water, and chickpeas. Cover and simmer on medium heat for 10-15 minutes or until the sauce thickens.

  4. Stir in coconut milk and simmer for 3-4 more minutes.

  5. Season with more spices if desired and serve warm.
