Creamy Butter Chickpeas with Rice
Ingredients
- 1 large onion
- 3 cloves garlic
- 1 tbsp fresh ginger
- 2 green chilis (optional)
- 1 tsp garam masala
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne
- 1/4 tsp ground mustard
- 2-3 large ripe tomatoes (400g)
- 1/2 cup water
- 1 1/2 cups chickpeas
- 3/4 cup coconut cream
Preparation
Heat some oil in a large pot and add the onion, garlic, ginger, and chilis. Sauté for 5 minutes.
Stir in all the spices until fragrant.
Add the tomatoes, water, and chickpeas. Cover and simmer on medium heat for 10-15 minutes or until the sauce thickens.
Stir in coconut milk and simmer for 3-4 more minutes.
Season with more spices if desired and serve warm.
