Easy Meaty Vegan Meatballs

Ingredients

  • 1 small onion
  • 2 cloves garlic
  • 200 g mushroom
  • 2 tbsp soy sauce
  • 1 can kidney beans
  • 100g bread crumbs
  • 1 tbsp ground flaxseeds
  • 3 tbsp water
  • 2 tbsp nutritional yeast
  • salt, herbs like thyme or parsley & pepper
  • 1 can tomato sauce
  • a handful of sundried tomatoes (optional)

Preparation

  1. Prepare the flaxegg by mixing 1 tablespoon ground flaxseeds with 3 tablespoons water and soak the sundried tomatoes if using

  2. Sauté the onion and garlic then add mushrooms and soy sauce

  3. Combine all the meatball ingredients in a bowl and mix well with your hands

  4. Form the meatballs and fry them in a little bit of olive oil

  5. In the same pan, add your tomato sauce and sundried tomatoes and let it simmer until the sauce is reduced

Tips

  1. For an even tastier meal, serve over spaghetti
