Jamaican Inspired Veggie Bowl

Ingredients

Spice mix

  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp cayenne
  • 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1/4 tsp ground cumin
  • 1/4 tsp black pepper
  • salt to taste

Chickpeas

  • 1/4 red onion (chopped)
  • 1/2 cup canned chickpeas
  • 1/2 cup tomato paste
  • 1 garlic clove
  • 1/2 tsp grated ginger
  • 2 tsp spice mix
  • 1 tbsp yogurt of choice

Preparation

Chickpeas

  1. Heat olive oil in a pan over medium heat.

  2. Add onions and cook for 1 minute.

  3. Add ginger and garlic, cook for 1 minute.

  4. Add chickpeas and spice mix, combine for 30 seconds.

  5. Add tomato paste and yogurt, cook for a few minutes, and it's done.

Cauliflower

  1. Slice cauliflower into 1/2-inch thick slices.

  2. Brush with olive oil and sprinkle 1 teaspoon of spice mix on both sides.

  3. Roast at 400°F for 20 minutes, flipping halfway.

Plantains

  1. Air fry with a bit of coconut oil at 375°F for 15 minutes, or oven bake or fry on the stove.

Assembly

  1. Combine the prepared chickpeas, cauliflower, and plantains in a bowl to serve.

Tips

  1. Double the chickpeas for more servings as it may only be enough for one bowl.

  2. Plantains can be prepared by oven baking or frying instead of air frying.
