Legume Rice Dish with Zucchini, Onions, Garlic, Oregano, Paprika, Chickpeas, and Feta

Ingredients

  • Trader Joe's Risoni
  • 2 chopped garlic cloves
  • 1/2 red onion diced
  • and stir. add 2 medium cubed zucchini
  • a can of chickpeas (rinsed and drained)
  • and 1/2 teaspoon oregano and 1/4 teaspoon paprika. season with salt and pepper
  • feta cheese

Preparation

  1. Cook a box of Trader Joe's Risoni and meanwhile, heat olive oil in a large skillet

  2. Add 2 chopped garlic cloves, 1/2 red onion diced, and stir

  3. Add 2 medium cubed zucchini, a can of chickpeas (rinsed and drained), and 1/2 teaspoon oregano and 1/4 teaspoon paprika

  4. Season with salt and pepper, stir, and cook until zucchini is browned and tender

  5. Add in the cooked Risoni, stir in some feta cheese, and serve
