Linguini with Cherry Tomatoes, Basil and Broccolini
Ingredients
- 1/2 lb. linguini pasta
- 1 small yellow onion
- 3 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp pepper
- 1 large bunch broccolini
- 1/2 cup vegetable broth
- 3 large cloves garlic
- 1 pint grape tomatoes
- Fresh basil
- Red chili flakes for serving
Preparation
Cook the linguini according to package directions until just about al dente in salted water. Drain and keep 1/4 cup pasta cooking water.
Meanwhile, preheat a large pan on medium heat.
Add the onion, oil, salt, and pepper. Stir and cook for 5 minutes.
Add the broccolini and broth, stir, cover, and cook for 3 minutes.
Add garlic and tomatoes, stir, and cook partially covered for another 5 to 7 minutes or until broccolini is fork tender.
Add the cooked pasta and pasta cooking water, stir, and cook for another minute.
Serve with thinly sliced fresh basil and red chili flakes.
Tips
Feel free to serve with parmesan or fresh parsley too.
If you don't have fresh basil, add 1/2 teaspoon dried basil to the sauce, or a full teaspoon if you love basil.
