Quick and Easy Chickpea Curry

Ingredients

  • 1 can drained chickpeas
  • 4 tbsp crushed tomatoes
  • 1 cup unsweetened plant milk
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1/2 tsp garam masala
  • 1 tbsp turmeric
  • 1 tbsp curry powder
  • 1/2 tsp smoked paprika
  • 2 cups baby spinach
  • Black pepper and crushed red pepper to your taste
  • 1/2 cup chopped cilantro
  • 1 cup basmati rice

Preparation

  1. Put on rice to cook according to package directions.

  2. In a pan over medium heat add chickpeas, tomatoes, plant milk, and dry spices. Bring to a boil and stir often. Turn down to simmer and add spinach, black pepper and crushed red pepper.

  3. Serve with rice and garnish with cilantro
