Quick and Easy Chickpea Curry
Ingredients
- 1 can drained chickpeas
- 4 tbsp crushed tomatoes
- 1 cup unsweetened plant milk
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/2 tsp garam masala
- 1 tbsp turmeric
- 1 tbsp curry powder
- 1/2 tsp smoked paprika
- 2 cups baby spinach
- Black pepper and crushed red pepper to your taste
- 1/2 cup chopped cilantro
- 1 cup basmati rice
Preparation
Put on rice to cook according to package directions.
In a pan over medium heat add chickpeas, tomatoes, plant milk, and dry spices. Bring to a boil and stir often. Turn down to simmer and add spinach, black pepper and crushed red pepper.
Serve with rice and garnish with cilantro
