Quinoa Cilantro Lime Salad

Ingredients

  • 1 cup quinoa
  • Pinch of salt
  • 1/2 cup fresh cilantro
  • 1 scallion
  • 1-2 cloves garlic
  • 1/4 cup plain unsweetened plant-based yogurt or extra virgin olive oil
  • Zest of one lime
  • Juice of two limes
  • 1/2 tsp coriander
  • 1 tbsp white wine vinegar
  • 1 tbsp maple syrup
  • 15 oz can white beans
  • 1/3 cup red onion
  • 1/2 cucumber

Preparation

  1. Cook quinoa according to the package instructions. Once cooked, fluff and allow to cool.

  2. Prepare the cilantro lime dressing by blending cilantro, scallion, garlic, yogurt or oil, lime zest, lime juice, coriander, white wine vinegar, and maple syrup in a food processor or blender until smooth.

  3. In a bowl, combine the quinoa, white beans, red onion, and cucumber.

  4. Pour the dressing over the mixture and toss everything together.

  5. Add salt and pepper to taste, then serve immediately or chill in the refrigerator.
