Roasted Cauliflower Steak Nourish Bowl

Ingredients

Roasted cauliflower steaks

  • 1 head of cauliflower (about 600g)
  • 1 teaspoon onion granules
  • 1 teaspoon garlic granules
  • 1/2 teaspoon smoked paprika
  • 2 teaspoons nutritional yeast
  • olive oil
  • pumpkin seeds or sunflower seeds or both (optional)
  • crushed sea salt and black pepper
  • 1 tablespoon fresh chopped parsley for garnish

Nourish bowl components

  • Brown rice
  • Red kidney beans
  • Cucumber
  • Avocado
  • Caramelised onion hummus
  • Spinach

Preparation

  1. Preheat the oven to 200C/180C fan/400F/gas mark 6 and line a high-sided baking tray with nonstick baking parchment.

  2. Slice the cauliflower lengthways into thick slices and place them onto the baking tray.

  3. Drizzle the cauliflower steaks with olive oil until all sides are saturated.

  4. Add onion granules, garlic granules, smoked paprika, nutritional yeast, crushed sea salt, and black pepper into a small bowl, then mix well until fully combined.

  5. Sprinkle the seasoning all over the cauliflower steaks on all sides until evenly coated.

  6. Cover the baking tray with tin foil and bake in the oven for 6 minutes, then remove the foil, sprinkle with pumpkin or sunflower seeds, and bake for a further 10-15 minutes.

  7. Turn the cauliflower over halfway through the cooking time, garnish with chopped parsley, and enjoy.

Assembly

  1. Cook brown rice according to package instructions.

  2. Prepare red kidney beans, cucumber, avocado, caramelised onion hummus, and spinach as desired.

  3. Assemble the nourish bowl by combining the roasted cauliflower steaks with brown rice, red kidney beans, cucumber, avocado, caramelised onion hummus, and spinach in a bowl.
