Spicy Udon Stir Fry
Ingredients
- 1 individual package of fresh or frozen Udon Noodles
- 8 oz of Extra Firm Tofu finely crumbled
- 1 large Carrot julienned
- 2 Green Onions sliced thin (reserve some of the green parts for garnish)
- 4 cloves of Garlic minced
- 2 Tbsp (30ml) Oil for cooking
Sauce
- 2 Tbsp (30ml) Vegan Oyster Sauce
- 1 1/2 Tbsp (23.5ml) Dark Soy Sauce
- 1 Tbsp (15ml) Soy Sauce or Tamari
- 2 tsp (10ml) Rice Vinegar
- 1 1/2 Tbsp (23.5g) Sambal Oelek
- 2 tsp (10g) Sugar
- White Pepper to taste
Preparation
Prepare the udon noodles according to package instructions and set aside
Heat oil in a large pan or wok over medium-high heat
Add minced garlic and cook until fragrant, about 30 seconds
Add crumbled tofu and stir-fry until it begins to brown
Add julienned carrot and sliced green onions, stir-fry until vegetables are slightly softened
Pour in the sauce mixture and stir to combine all ingredients
Add the prepared udon noodles and toss everything together until well coated and heated through
Garnish with reserved green parts of the green onions before serving
