Vegan Chili Garlic Noodles

Ingredients

  • 1 tbsp olive oil, sea salt and cracked pepper
  • 1/2 block tofu
  • 7 cremini mushrooms, sliced
  • 1/2 red pepper, diced
  • 1 cup cooked chickpeas
  • 1 green onion, sliced
  • 1 tbsp sesame seeds
  • Broad rice noodles
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

Sauce

  • 1/4 cup hot oil
  • 1 tsp chili flakes
  • 2 large garlic cloves, minced
  • 1 green onion, sliced

Preparation

  1. Cook noodles according to package.

  2. Toss cubed tofu with oil and season.

  3. Roast in oven at 400 for 20 minutes.

  4. Saute peppers, mushrooms and chickpeas, add tofu and noodles.

  5. Add a splash of soy and sesame oil.

  6. In a separate small pot heat olive oil.

  7. Pour hot oil over remaining sauce ingredients.

  8. Mix together and pour over noodles.

  9. Toss to coat and eat immediately.
