Vegan Hoisin King Oyster Mushroom Bao
Ingredients
- 2-3 King Oyster Mushrooms (depending on size)
- 1 tablespoon Sesame Oil
- 2 1/2 tablespoons Cornflour
- 1 1/2 teaspoons Chinese 5 Spice
- 2 tablespoons Vegetable Oil
- Approximately 3 tablespoons Hoisin Sauce
- 4 Gua Bao
- 1/4 Cucumber
- 2 Spring Onions
- 2 tablespoons Vegan Mayo and 1 teaspoon Hoisin (for mayo mixture)
- Small bunch of Coriander
- Sprinkling of sesame seeds
Preparation
Shred the oyster mushrooms using your fingers or 2 forks to imitate shredded duck.
Drizzle shredded mushrooms with sesame oil, then toss with cornflour and Chinese 5 spice.
Fry the shredded mushrooms in vegetable oil over medium heat until golden and crispy.
Drain on kitchen towel to remove excess oil, then coat in hoisin.
Fill up your steamed buns with the crispy 'duck,' and top with cucumber, spring onions, vegan hoisin mayo, coriander, and sesame seeds.
