Vegan Homestyle Tortellini Soup

Ingredients

  • 1 small carrot
  • 1 clove garlic
  • 1 small onion
  • 1 spring of thyme
  • 1 spring of rosemary
  • 625 ml vegetable stock
  • A pinch of salt
  • 1/2 lemon, juiced
  • A pinch of sugar
  • Salt (if needed)
  • 1 serving vegan tortellini
  • Oil (for sautéing)

Garnishes

  • Sun dried tomatoes
  • Vegan Parmesan
  • Basil

Preparation

  1. Roughly chop the carrot, garlic, onion, thyme, and rosemary, then sauté them in oil.

  2. Add the vegetable stock and a pinch of salt, and let it simmer for 30 minutes.

  3. Remove the herbs, then blend the carrot, onion, garlic, and some of the broth until creamy, and add it back to the saucepan.

  4. Add the lemon juice, a pinch of sugar, additional salt if needed, and the vegan tortellini, then cook until the tortellini are done, following package instructions.

  5. Serve the soup with sun dried tomatoes, vegan Parmesan, and basil.
