Vegan Lemon Paprika Pasta
Ingredients
- 1/2 lb. pasta
- 1 cup cashews
- 2 tsp sweet paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/8 tsp turmeric
- 1/4 cup vegan cream cheese
- 1 cup warm vegetable broth
- 1 tsp kosher salt
- Pepper to taste
- Juice of 1/2 lemon
Garnishes
- Chives
- Paprika or cayenne
Preparation
Boil pasta in salted water until al dente.
In a separate saucepan, boil the cashews for 20 minutes.
While they are cooking, gather the other sauce ingredients.
When pasta is done, drain it and reserve 1/4 cup of the cooking water.
Drain the cashews and add them to a blender with the remaining sauce ingredients, then blend until smooth.
Add the sauce back to the hot pasta.
Stir well and add a bit of the reserved pasta water a little at a time if desired to thin the sauce.
Serve and top with chives and paprika or cayenne if desired.
Tips
This dish is ready in about 30 minutes and can be customized with added vegetables or proteins.
